Under the guidance and supervision of the Sous Chef must assist in the safe production and monitoring of meals for all kitchen requirements. Assist in ensuring all foods are prepared as close as possible to service times, using methods of batch cooking where suitable, and that any food cooked in advance is correctly stored Communicate the status of all food production to supervisor to ensure a continuous flow of service Control food waste and make sure unused food is returned to the storeroom on a daily basis for credit Adjust mise-en-place and food requisitions to the daily guest count Ensure proper stock rotation in all areas of the kitchen and minimize wastage Organize and maintain all the shelves in freezers and coolers on a regular basis Assure proper cleanliness and sanitation of galley and food storage areas and equipment in all such areas Report any pest sightings and ensure the outer kitchen doors are kept closed at all times to prevent pest contamination Perform related duties and special projects as assigned by Executive Chef Must have excellent food preparation and presentation skills as well as being organized and competent in working in all areas of the kitchen Diploma or certificate from a culinary school or equivalent education
